My Absolute Favorite New Recipe.

I found this recipe in the back of this month's issue of In Style, of all places. It looked amazing in the magazine and I immediately rushed out and bought all the necessary ingredients. We had it the same night, and let me tell you it did not disappoint. Not only does this dish have the "wow" factor that I like to serve when we have company over, but it is also super easy to make and the ingredients are very inexpensive. For me, nothing says summer more than this recipe.

Watermelon and Feta Salad with Serrano Chile Vinaigrette. 
Serves 6

Dressing

1 cup olive oil
2 tbsp fresh lime juice
2 tbsp champagne vinegar (or white wine vinegar)
2 tsp chopped fresh thyme
1 small shallot, minced
1 Serrano chile, stemmed and sliced into small half rounds
Salt to taste

Salad
1 small seedless watermelon
1/3 lb wedge feta cheese sliced 1/2" thick (about 12 slices)
1 Bunch/ bag arugula 

Preparation

In a jar with a tight fitting lid combine olive oil, lime juice, vinegar, thyme, shallot, and serrano chile. Shake well. Season with salt to taste. Chill in refrigerator. 

Remove rind from watermelon and slice flesh into 3" squares or triangles. To assemble salad, layer one piece watermelon on one piece feta. Repeat. Drizzle with vinaigrette and garnish heavily with arugula.
