The Yummy Mummy recipe of the week.
By accidentally deleting this part of the blog Yum almost left Sarah G. without dinner tonight. Gasp!
Here you go. It's so easy and please tell me what you think!
Ingredients
1/4 Bag Elbow Noodles
2 Containers Vegetable Broth
1/2 Bag Spinach roughly chopped
1 can Diced Tomatoes with basil/oregano mixed in drained
1 Container Vegan Whole Kitchen Meatballs (in green box in the freezer section of Whole Foods)/ OR any Frozen Meatball.
Bring Broth to a Boil.
Add Meatballs and Pasta and Simmer for 10 mins.
Add Tomatoes and Spinach and Simmer for ten more mins.
That's it. I make it with a salad and garlic bread.
Super easy and perfect for a freezing cold day like we are having in today in Boston.

It sounds yummy,YM! Just a couple of questions. You might think that I'm a picky Italian, but what are elbow noodles and vegan meatballs? Is something that you have in the US and not in Italy (or the rest of Europe?). Anyway, buon appetito. Ciao. A.
Ah, I was just going to ask what elbow noodles are but Antonella has beaten me to it!
They are those little circular noodles that look like an elbow, about 6 cm long. Maybe it's just a US thing?
Vegan meatballs are "meatballs" made of no animal products.
Just to be clear I love me some meat.....The Husband who could use some more balls is a Vegetarian. Make for some interesting meals!
Now I would never serve this to a "real" Italian but for a quick and warm dinner it does the trick. Especially when you have a little one crawling under your legs!

Thanks, YM, for the clarifications. Actually I don't mind trying something new, just wasn't sure about the ingredients. I'm not much of a gourmet cook and I've lived abroad so long that I can adjust to almost anything...Ciao again. A.
Yummy, you are fabulous - thank you! The bad news is that I no longer have a Whole Foods near me so I had to buy a shady brand of vegan meatballs. The good news is that I just scorched the hell out of my tongue testing the broth, so I can't taste anything anyway. The soup smells great though.
Surprisingly, it really is hard to find quick veggie meals that aren't completely carb-laden and/or boring and tasteless.
I can't wait to try this! Remind me closer to (our) winter ok?! We're feasting on salads and fruits these days only x
Sarah I'm so glad you liked it! Hope you get those taste buds back soon! The husband is a vegetarian and I don't love carbs so I will be posting a lot more recipes like this!
